Autumn Butternut Squash Soup Recipe

One chilly fall afternoon, I stopped at my friend Katie's house in Milton (she runs a beautiful flower farm there if you're ever in the area!).
She sweetly offered me a bowl of soup to take home.
When I heated it up later that evening—oh my goodness—it was divine. I tweaked the recipe a little bit and this is our version!
The secret ingredient? Sweet curry powder.
Trust me, this soup is perfect for our crisp Wisconsin autumn evenings. The curry adds just the tiniest hint of warmth (maybe a 2/10 on the spice scale—our one-year-old ate it right up!).

Ingredients:
2 tbsp butter
1 butternut squash (medium, chopped)
4 medium carrots (chopped)
1 medium onion (diced)
2 stalks celery (chopped)
1 sweet potato (chopped)
3 cloves garlic (2 tablespoons minced)
1.5 tbsp sweet curry powder
1 container chicken or vegetable stock or bone broth (32 oz)
¼ c heavy cream
¼ tsp salt
¼ tsp pepper
Steps:
Sauté the veggies
In a Dutch oven or large pot, melt the butter over medium heat. Add onions, garlic, celery, salt, and pepper. Sauté for 8–10 minutes, until the onions and celery are tender and fragrant.
Add the stock, curry, and chopped vegetables Pour in the stock, stir in the curry powder, and add the chopped squash, carrots, and sweet potato. Bring to a boil.
Simmer Once the soup begins to boil, reduce the heat to low, cover, and let it simmer for about 40 minutes—until all the vegetables are fork-tender.
Add the cream Turn off the heat and stir in the heavy cream.
Blend until smooth Use an immersion blender (my favorite), food processor, or countertop blender to puree until smooth and velvety.
Serve and enjoy! Top with fresh-cracked pepper and a sprinkle of pepitas (or even some sour cream!) Serve with a simple side salad and a slice of crusty bread or a gooey grilled cheese.
Pro Tip: This soup freezes beautifully! I like to freeze individual portions in Souper Cubes—perfect for pulling out on a chilly fall day (like on dahlia digging day 😅).
